Barbecue purists would say that the only way to do this is to cook low and slow in a smoky environment, a process that results in impressive smoke ribs, but has a good amount of time and effort. The other time-tested method for cooking ribs is the stew: low and slow cooking in the oven in a sealed container until tender. Often the method of stew is followed by a sear over high heat to promote Browning for more flavor. A grill (preferably charcoal, in my book) works very well for this. Here is a method that served me well: Rub 6 tablespoons brown sugar 2 tablespoons Packed 2 tablespoons kosher salt spices (chile test powder, onion, cumin, sage, black pepper and a pinch of pepper, or use your favorite) Mix well and cover the ribs generously with the mixture. Separate the ribs to that the friction do its thing. Try to wait at least 30 minutes. Make a bed of aluminum foil on a baking sheet. Make sure you take out the ribs, as well some stew liquid. Pour a cup of wine, beer or other liquid flavor on the bed. Aromatic vegetables (onion, garlic, etc.), and slightly sweet taste and also make nice additions. Making a stop on the bed and seal the package. Try to make sure it is tightly sealed. Place in a preheated oven 250 degrees. Cook by 2 to 2.5 hours not until the ribs are tender, but completely falling apart. Remove the ribs of your liquid and let cool slightly. Cut into pieces 2 to 3 ribs by piece, coat with some sauce and grill on high briefly. The point of the grid is not the cook more ribs, but to get some browning on the outside and sauce. If you are looking smoky flavor, I recommend using wood charcoal for the grill (maybe with a bit of wood chips thrown before the meat goes on). Another option is to add a little liquid smoke to the stew liquid. Not exactly the same, but it does work. If you are really looking for a smoky depth of their ribs, it is best to go with the traditional barbecue. Look at it as a relaxing way to spend a Sunday afternoon. ;)
