Almost everyone loves Mexican food regardless of where they are. Here is a Mexican recipe for grilled chicken that you can create in your own kitchen. This recipe is very easy to do and you can be sure that your friends and family will enjoy it.
Mexico's Grilled Chicken with Tomato Avocado Salsa
Ingredients for 4:
4 boneless chicken breasts (leave skin on)
2 large tomatoes
1 small red onion
1 avocado, peeled
2 jalapeño peppers or 3 to 6 new Serrano Chili Peppers (plus the spicy, start with 3)
3 cloves garlic, unpeeled
2 tablespoons orange juice
1 tablespoon lemon juice
Salt and pepper to taste
2 tablespoons chopped cilantro
Olive oil spray chicken breasts
Cut tomatoes and onions red into thick slices.
Cut peppers in half and discard seeds.
Put the garlic and tomato, onion and pepper slices on the grill. Leave These grill with lid closed until the vegetables and peppers are charred and garlic skin comes out (about two minutes per side).
Remove the plants, pepper and garlic on the grill and chop and mix well. Stir in the lemon and orange juice and season with salt and / or pepper (to taste desired).
Using half of this spread mixture on chicken breasts (be sure to rub with the loose skin) and allow to marinate for 1 hour at room temperature or up to four days refrigerated.
When ready to roast chicken sprinkled with olive oil and place on a grill that has been preheated on high. Cook chicken breasts until the juices are clear – about five minutes per side.
While the grilled chicken cut the avocado and stir in the remaining half of the vegetables, pepper and garlic mixture. Add the cilantro and blend well.
When the chicken is cooked to your satisfaction remove from grill and cut into ½ cm slices. Now serving friends and family with avocado, tomato sauce on the grill.
Remember that food safety is very important. You want your grill to be both fun and safe for everyone. Always make sure you cook the meat thoroughly. Cut into the chicken breast at its thickest part, when fully cooked juices will be clear and the meat will be white. Keep all utensils used to handle raw chicken separate from those used to handle cooked meat. Sure washing hands after handling the raw chicken. Cross contamination of bacteria can be as dangerous to your health as eating raw meat.
