We have heard many times that the way to lose weight is to limit calories, fat and carbohydrates. The bad fats are saturated and trans fats. Good fats are monounsaturated and polyunsaturated fats with omega-3 fatty acids. If we eat too many bad fats that can be at risk for certain diseases. While the good fats reduce this risk. Strange as it may sound, our body needs some fat to work.

The good fats lower the bad cholesterol and increase good cholesterol. Good fats can be found in a variety of healthy foods. Monounsaturated fats are found in nuts, avocados, olive and canola oils. Polyunsaturated fats are found in salmon, corn oil. Saturated and trans fats raise bad cholesterol. These are found mostly in animal products. Trans fats are in packaged foods commercially.

How can we reduce our consumption of bad fats and increase our consumption of good fats? When using used cooking oil that are low in saturated fat and high in monounsaturated fats, canola oil and olive oil are good alternatives. While saturated fats found in animal products Use low-fat dairy products and reduce the fat and skin from meat. Also, avoiding foods commercially packaged can avoid trans fats.

We need good fats in our diet. There are actually many health benefits. It was recommended that we eat 7-10% of their calories from fat. We are important fatty acids, as omega-3 fatty acids found in fish from the good fats. It is difficult to get all the omega-3 fatty acids the body needs only diet, taking a good supplement, including essential fatty acids is a good way of getting the proper amount. It is also important to have a sustained amount of supplement of omega-3 fatty acids, because it takes weeks for your body tissues to absorb fatty acids.

The good fats also maintain our smooth skin, give us energy, and most importantly provide fat soluble vitamins. Fat-soluble vitamins include vitamin A, vitamin D, vitamin E and vitamin K. These vitamins help your immune system, good eye sight will help to build strong bones, and make sure that when cut bleed to death. Fat-soluble vitamins are stored in your system until it is needed. Along with receiving these important vitamins from food, you can get from a good multivitamin. Multivitamins give us vitamins and minerals our bodies need that we do not receive our food. Essentially, it fills the gaps.

The best way make sure to eat good fats and avoid bad fats is to read the nutrition label of foods. Watch the total fat on the label. Make sure it is low. The amounts of monounsaturated, polyunsaturated, saturated and trans fats. When reading the label that you can ensure that you are cooking with good fats and fat leaving bad. Here are three tips for cooking with the good fats. When used cooking oils, use nonstick cooking spray, and canola oil or olive oil. Also when is cooking the meat with fat in it, Trim fat from the grill or oven and meats. If the recipe calls for coating the bread crumbs, use meat and bake it.

From the columnist: Since the joy of my wife Karen and I have to entertain our friends and family and our love of good food and wine, this column will be co-written by both. Karen will focus in recipes, and may sneak in some entertaining advice, while I pair wine with what Karen has cooking.

Most summers, my wife Karen and I I try to take a couple of gigs in some places, local places, Ravinia and downtown Chicago. It's always fun to go with other couples and although usually dine around concert venue, we also met before the concert and the grill of a simple meal at home. This is convenient, affordable and allows members of the group (which are not driving) to share some nice wine with a healthy meal.

On a recent weekend, we went to Ravinia. Instead of the traditional picnic on the lawn, the group opted for dinner at our house, then the trip to Highland Park. Karen asked me to select some wines for the occasion. We started with a variety of finger foods – roasted shrimp, caprese skewers and a simple plate of Brie, sliced apples, red grapes and a loaf of French bread sliced.

The dinner menu of grilled salmon with a pinot noir marinade, mix of white and wild rice, dried cherries and sliced toasted almonds and asparagus grilled with blue cheese and balsamic vinaigrette.

Wine Basics

In receiving a group, it is usually best to offer both a red wine and white. The summer picnic wine should be light, refreshing and easy drinking. They also must be able to be served slightly chilled. Karen's menu was easy Torque on the side of red wine, pinot noir wine is included in the marinade, peers and the salmon can be served slightly chilled with great results. I am a big fan of pinot noir, because it is a versatile wine that works well with a variety of foods. Its acidity helps balance the richness, the fatty nature of salmon, making it a great choice.

On the side of white wine wine, a light, crisp and refreshing is ideal. Italian whites are a great option for the menu of Karen, but the acidity of the vinaigrette balsamic dressing must be taken into account. While white is best known Pinot Grigio from Italy and has a universal appeal, not the best game because of its acidity. One solution is to find a style of wine blend of Pinot Grigio and another variety that offers less acidity, resulting in better match with a vinegar-based dressing. One of my recommendation is a mixture of both and Masi Winery Pinot Grigio Verduzzo, a nice wine with a fruity style. Another Italian couple varieties it is Trebbiano. It is a light wine summer and refreshing and pairs with picnic fare.

So, to please a group and add this special menu, we recommend that provide both a white and red wine, in this case a pinot noir and a blend of pinot grigio or white wine Trebbiano.

Pairing

Fast, easy and healthy – there are three perfect words we love to hear when thinking about dinner. This marinade calls for pinot noir, the perfect match with salmon. Therefore, open the bottle of pinot a little early and steal a cup of this delicious marinade. The recipe is adapted from Harvest restaurant where they pan fry the fish (instead of the grill) and serve over a bed of mashed potatoes.

Grilled marinated salmon with pinot noir

2 salmon fillets, rinsed and patted dry
1 cup pinot noir
2 shallots, peeled and sliced
2 springs fresh thyme, chopped
1 tablespoon sugar
1 teaspoon peppercorns
Serves two.

Mix marinade ingredients in a large zip-lock bag or covered dish not reactive. Add salmon and turn to coat. Refrigerate, turning several times, at least 30 minutes, but no more than an hour. Place the salmon on the grill basket hinge. Grill about 5 to 7 minutes per side or until fish.
